I mean...what would be the point without it. I'm sure there are some who import their collections, but physical media is dying.
I have 1500 movies and 4400 TV show episodes on my Plex server. All of them ripped from my personally owned DVDs. I did it for convenience. Not only for on-demand, but using Tunarr, I have live streaming channels of those videos as well.

I do use it as I use the Plexamp app to stream music to my Android telephone when I need music on my Android device. I also use Plex to stream my music via an Amazon skill to my Amazon Echo Dot Alexa speaker thing. So, about me "Apparently you don't use Plex at all.", can you elaborate on that?
Care to elaborate on your post about not wanting to pay $750 to use Plex when you already use Plex and know you don't have to pay?

Insane, I think I got mine for $50 like 10 years ago.

At this point just quit offering the lifetime pass, I can't imagine anyone having this. You'd need to have it for 10 more years of annual payment to make up for it. I'm truly guessing by then there will be something better.
To me it sounds they want to make some quick cash before closing down.

How can their costs possibly be so high as to justify this? They say when they started they were movie and TV fans that wanted to build something great for people like them.

OK, they did that. What changed? How is it possibly over three times more expensive/valuable now? This is high end commercial software territory. Just doesn't make sense.
The only thing more expensive is the lifetime pass. The monthly and annual prices that most people (who don't already have a Pass ) pay for, is the same price. Nothing changed. It's the equivalent of getting rid of the lifetime option, unless you REALLY want it then it's $750.

I would pay good money if Infuse would allow for remote streaming via Tailscale. I would ditch Plex if that ever occurred.
I think you are confused. The whole thing with plex is being able to play your media from anywhere in the world without having to use something like Tailscale. And infuse or jellyfin dont need to support Tailscale at all they have worked from day 1 of Tailscale. I dont think you understand how Tailscale works at all.

Bought my Plex Pass lifetime for $75 in 2012, which feels ridiculously inexpensive now obviously.

Honestly, I use the server part but not really the front end anymore.

I play everything off my Plex server with Infuse these days.
I suppose I could use a variety of server backends with Infuse if I had to.
I moved to Infuse only. My files live on my Unifi NAS and Infuse (Cloud) for the navigation and playback.

Wow! I bought this for like $80 during a black friday sale years ago. I HATE what they did to the mobile app but I will say that so far they have kept their word on it being a true Lifetime subscription. I've never paid a single penny more for anything. If you're on the fence, I would definitely get it for $250 before July.

It's 100%
I use Plex at home to play my ripped DVDs without having to keep getting up and putting discs into the player. No pirating. Of course, those things I can do for free with Plex, so the price of the Plex Pass doesn't affect me. It might be more accurate to say that close to 100% of *Plex Pass* users, who want remote streaming, are pirating.

Massive increase in price. Not long ago it was just a bit over $100. Looks like they want to shift subscribers to subscription.
