You actually can.
Go to System Preferences --> Displays --> Press Option/Alt while clicking on ''Scaled'' --> The ''secret'' button ''Show all resolutions'' will appear, allowing you to choose non-HiDPI resolutions.

in your example, would going from 5120 X 2880 to the next lowest option, 2880 X 1620 , be the equivalent of using Windows 10 'scaling' slider to bump it up to 125% of the selected resolution? That option worked great for me in Windows, to be able to not have to back down the resolution yet increase font size,etc
edit -...I just tried my next to lowest setting from max...yes, things got bigger, but all that glorious razor sharpness just went away with it....It's a vexing trade-off...unless Apple engineers can figure out a way to do what they did for the window body of web browser content, ie- press Control + to increase text and overall content size there...that method works so well...if they could only apply that concept to program and system menu bars , windows and their text size!
