In a way my old iPhones have turned into my new “iPod Touch”. Right now my old, deactivated 5S does an admirable job of being my substitute iPod Touch.

I still have a lot of nostalgia for the iPod Touch line, though. My first iOS devices were the 2nd gen, and later the 4th gen iPod Touches, before I had finally gotten an iPhone altogether. Even after that I still went out and got a 5th gen Touch on release because they were so thin and so neat looking.

I hope Apple keeps the Touch around for at least one more hardware refresh, although I can’t help but wonder if practices like mine of keeping prior iPhones around is part of the reason it’s getting difficult for many to justify purchasing a new Touch.
 
Making sense in questions of resource waste, continuing iPods is not acceptable, just to hang onto nostalgia does not justify further production. Apple is proclaiming "green" gear, so it would be contradictive to keep up the series.
All demand is covered now by phones (can easily be blocked down to children purposes) or pads.
