If you have been PFS for a while via Apple.com, UPS will let you do it by reference, which is typically the phone number you ordered with. Don't change the dates when searching.
I read a lot of that. From what I heard Apple might have been housing them in centrally located warehouses until launch day. It makes some sense.
True maybe that's why mine still processing since it's very close
So what can do you with the serial number once it's in your profile? Just checking manufacturing date?

Ordered a gold 6s, 64Gb on T-Mobile at around 3:08am EDT when the store came up and mine is still showing processing.
A lot of people in the Verizon thread (including myself) are showing that theirs were shipped.
