I've had that exact same issue with a Touch running 2.1.1 and iTunes 8.2. I guess that occasionally it just wipes and resyncs all the information on the iPod. I didn't know why (and it was annoying, I was trying to add music before running out the door to school). I let it finish the wipe/sync, and everything was just fine.
*shrug* I don't know if that'll help, but I thought I'd mention it.
Actually, when I updated my 1st gen Touch to 3.1.1 (from 1.x) all of the albums that were mismarked as 'compilations' even though the songs were by a single artist showed up under 'various artists' on the Touch when viewed in cover flow mode. That was kind of annoying.My solution will, I suppose, be to revert to my old way and convert the albums into "compilations", but it seems silly.

I've got the same problem on my iPhone.I have the duplicate albums thing happen too. Checked the ipod out in iTunes and it's fine but when you look it up on the ipod, there's duplicated albums.

Like you, I was frustrated with this problem after I updated to 3.1.1. But after much diggin around I found a solution that seems to work.
In ITunes, right click the field that displays the name, album name, and artist etc, and then select album artist.
Carefully look at those albums that are displaying mulitple images and you should see that in the album artist field, something will probably be displayed in one of those tracks that is not displayed in other tracks,
The Solution is to make sure that whatever is in the album artist field for one track is the same for ALL tracks for that album, syncronise the Ipod device, and you should find that that particular album, now appears as one image when you search your albums
