They used to do this with Bluetooth also. Was always re enabled after an update, super annoying.
Yea I gave up on that one. It would even re enable when u turn off and on your phone. Im sure AI does this too. So when they turn off their phones and back on they will need to turn it off. Each time

FWIW this didn't happen to me on an iPhone Pro, iPad Pro, or Mac.

Are you sure? I updated 4 x Iphones 15 Pro and none of them had Apple Inteligence re-enabled.

Same behavior here, had the last point update on everything already. I wonder if it's the same bug if you're running an older build and jump straight to the latest.

Given the newsworthiness I'm surprised they didn't fix it, but nothing I have is affected.
 
Next thing you know they will turn on Apple Care, Apple One, iCloud+ subscriptions, because as some MacRumors users here like to insist, Apple knows best, and they just want to give you the best experience.

With new iOS software updates, Apple has been automatically turning Apple Intelligence on again even for users who have disabled it, a decision that has become increasingly frustrating for those that don't want to use Apple Intelligence.

Yes, aware there’s a bug turning it back on. I’m sure it’ll get fixed. If it’s intentional then Apple should do better. But again, you can just turn it off, or do what my wife does, leave it on and just ignore it until she wants to make a genmoji.
This is not a bug, but rather a feature. Apple will do whatever it can to get iPhone users to use it.
