This thread has a lot of good suggestions! I've picked up a few good ones from the recommendations here. Here's what I'm rocking:

Pcalc
eBay
Amazon
Apple TV Remote
Cnet
Violet for Reddit
Appy Geek
A Tiny Game of Pong

I'm still waiting for the watch to become more useful, because many of the apps are still meh. I do like it though, excited to see what the future holds!

I've found another great app! It's a Wikipedia reader called Viki:

Viki · A Nice Reader for Wikipedia by Raureif
https://appsto.re/us/I7Pn7.i
Price: $1.99

It works really well and it allows you to browse the intro section of any Wikipedia article. You can use voice dictation to search for a topic or article. It also can read you location if you allow it and it will show you nearby places that have articles on Wikipedia. It is a really cool app, one of my favorites on my watch!

Must say the most disappointing part of the Apple Watch so far, is not the watch itself or the features, but the lack of great apps after the 2.0 update is pretty incredible - I use mine for running, and have used Nike+ since the first iPod Nano had it via a chip (ever since been using it on my iPhone and the Nike GPS watch, so I'm pretty invested in it) but the Nike Running on the Apple Watch still sucks big time - it's 1.0 app, it says they are not allowed to use the heart rate monitor and it's slow and terrible to run with..

I'm also disappointed about Nike+, but I finally figured out how to get HR data on it. My run routine has always been 1) built in workout.app on the watch 2)Nike+ on the iPhone. This gives me the best output and isn't too cumbersome. Nike+ hasn't used HR (even though I have everything turned on in health kit). But if you go into the run settings as you are starting an individual run, there will be the option to turn it on. In my experience, it stays checked "on" but doesn't always record my HR data.... I think the iPhone needs to be unlocked for at least a certain amount of time during the run (maybe all of it for all data?). I believe this is because the HR data is encrypted and the iPhone needs to be unlocked to allow apps to read the data.

I use nothing but Apple apps on iPhone and watch. I would use 3rd party apps but I just hate that you can use Siri with them. So nonstick with Apple made apps for that reason.

My faves include:

Airlines - FlyDelta and American - boarding passes on my wrist
Weather - BeWeather 2 - awesome, configurable complications and accurate weather info
Miscellaneous - iTranslate for quick language translation tasks
Miscellaneous - Just Press Record for quick audio notes

My favorites so far has to be:

Apple Weather App (mainly because it's the fastest and accurate.)
Night Sky (I love this app on iPhone and it has nice glance for Watch.)
Timepage (my go to calendar app.)
Clear
Apple Workout app
Strava
(For cycling.)
Just Press Record (for quick voice memos.)

Things by Culutured Code.

This thing is my brain outside of my body. I've been using it for years and couldn't live without it. The Watch app is fantastic and has won a permanent spot in my complications.

A quick look at my Watch tells me how far I am in completing all my tasks for the day. A glance quickly shows me my tasks. This comes in handy as an photographer. I can quickly swipe up to see my shoot list for an event and tap done as I get each shot.

I bought my watch for the workout and health tracking, so I primarily use the Activity app, Workout app and Breath. The third party apps I use are Pillow (sleep tracking) and iHydrate (water consumption tracking).
