My Mac Pro currently has an MPX W5500X installed, so this would be (essentially) the same card.
Just to clarify, will this video card work natively out of the box or will it need to be flashed?
You are very lucky with your purchase. The W5500x is substantially better than the super ancient RX 580 baseline card.
With the MP7.1 there is no flash required any more if you stay inside Apple recommended gpu spectrum. The only item you will need is the Belkin Mac Pro cable kit to connect the power.

No need to be flashed. Be aware that you can't route video signals without a MPX GPU.

This computer will be run headless, no need for video routing.

That is my intention. I plan on installing two Promise Pegasus R4i units as a RAID-50.
 
am I stuck with 2 slot and beyond GPUs if I need to be past Ventura and on Metal 3?

This is the list of supported GPUs with Ventura that have METAL 3 support, but this is only applicable with a 2019 Mac Pro:


The issue is that there is no METAL 3 support for MacPro5,1. NAVI does not even work with Ventura and newer with a MacPro5,1 and while VEGA GPUs support METAL 3 with Ventura and work with OCLP, you'll have to remove the Ventura drivers (METAL 3) and replace it with the Monterey drivers (METAL 2) to have GPU drivers that work without a CPU that support the AVX2 family of instructions.

There are FirePro GPUs singleslot that work with MacPro5,1, but these are Polaris GPUs (RX 560/580) and METAL 2.

Ohhh, I forgot to mention I am on 5,1. Thanks for letting me know about Vega thing. I saw on the Apple website that Vega supports Metal 3. Almost bought a Vega 56. Sad that it’s the case.
