there could be a simple icon somewhere on the touch pad or a keyboard short cut or dedicated button to switch between coverflow mode and navigation mode. coverflow is being used in everything in leopard by the look of it.
it could also switch into coverflow when you changed applications say from browsing in finder where you just navigate

then when you go into iPhoto it turns to coverflow

im not saying get rid of the usual navigation. if you want the navigation only style you could do it in the settings.
It just seems odd to me that Apple would dedicate that huge of a touchpad space and give it a nice enough display to use as coverflow... I think the new laptops will have maybe a larger trackpad area but nothing to the effect of a second screen, just doesn't look smooth to me.
