I have searched and there are so many utilities that sound like it would work but the site that I have seen them on seems suspect. I would like to ask you here.
I have a Sandisk 1TB SSD and would like to encrypt it but be able to go from work to home and be able to open on Windows and Mac. I do not like the software that Sandisk has included. It just makes an encrypted folder that can be accessed and deleted. I do not want the file contents to be seen by just plugging in the drive.
 
You could use Veracrypt. It's fast in Windows but I haven't tried it in macOS yet. Be sure to use ExFAT for the filesystem. So, it is universally supported in Windows and macOS.

Veracrypt for Mac also requires installing FUSE.

Edit: Use AES encryption. As that is hardware accelerated.
