I did the same thing at my local EE store in the UK.

I was the first one in the store at 08:00, was told I'd get an email confirming availability from EE. The guy in the store thought I'd be able to pick it up on launch day, hope they have stock!
A quick note on EE UK pricing.
I'm going for a 2 year contract:
128GB 6+ £149.99 up front
£75.99/month for 50GB Data and unlimited minutes/texts
So for a £789 handset, I'm getting a £640 subsidy = £26.67/month over 24 months.
So effectively I'm paying £49/month for 50GB of 4G data
