I find it funny that some people are using projected delivery dates to gauge when a refresh or new product announcement will happen.

You can choose to do so, but it is no more credible an indicator than reading tea leaves.

The projected dates have been changing for the last 3+ months now and we've heard nada from Apple all this time.

Need I say more?

Your guess is as good as theirs. There does seem to be a lot of indicators pointing to new pro's. We'll see what happens.
