NFC - The standard response is "people aren't using that enough right now". My response is "Once iPhones have it everyone will be using it".
More RAM - would make browsing multiple web pages really nice. I agree it's a spec that most iPhone users will overlook though.
Battery - Can't do a whole lot more with the current iPhone footprint, but as it gets bigger, so does that battery life.
Processor - Depending on what iOS6 brings to the plate, a faster processor might be nice. But even if not, a faster under clocked processor (read more efficient) would always be welcome. Think better battery life here.
High Res FFC - This could use an improvement. Admittedly, probably not a huge deal for most people. I Skype twice a week with family overseas. A nice camera is very nice.
Siri - One that actually works would be nice. Yes, I know this statement gets overused, but I legitimately get the "I am sorry I can't help you right now" response too frequently. Conservatively I would say 25% of the time, but realistically it's probably a lot closer to 50%. I am not even asking for more tasks than Siri can currently do. I am just asking that Siri be able to do what it was sold to me to do upwards of 90% of the day.

Why is Windows Phone left out as an alternative? WP8 could end up being very competitive against iOS and Android.

Perhaps. It is clear to me that people want the phone to look completely different. The 4S isn't different enough from the 4 for these people. They want to be using the phone in public and for it to be clear that they have the top of the line model. People are like that. Silly, but true.

As far back as the original iPhone, I was convinced Apple would release an 'iPhone Pro'. Apple are all about being seen - using an Apple product is a huge status statement for a lot of people (perhaps most?).
The iPhone has become arguably the most common smartphone there is - businessmen, kids, A-list celebrities, Z-list celebrities, the unemployed etc. If I'm paying a premium price, I don't want to have something that everyone else has.
Plus, most people have their iPhone in a case and, from the front facia alone, the iPhone has barely changed at all since the original iPhone. So, in a social situation, my peers wouldn't be able to tell the difference between my 64GB 4S and my mate's 8GB iPhone 4. As sad as that is, I think this is how a lot of people feel.
That's the thing. You aren't paying a premium price. You are paying what every other high end smart phone costs, basically. And there are a lot of them. But I get it. Like I said, plenty of people are that way with more things than just smart phones.
That's a fair point. Maybe what I meant was buying into a premium brand.
Although, spec-for-spec, I'm sure my iPhone 4S was a lot more expensive than my Samsung S2. (although maybe I benefited from the reduced price of the S2 rather than the fixed price of apple products).
I agree that it can't just be a minor update. The hardware needs to be major or else alot of people will be mad. I know I for one will most likely switch to android if that happens
