Even Apple's new iPod touch POS sled for taking payments at their Apple Stores, reportedly came with NFC support built-in.

What do you mean by "POS"? I've only seen that lettering used one way and I'm pretty sure that's not what you're saying in this context.
 
I'm really hoping to see NFC in upcoming Apple products. It can be very useful for pairing things like Bluetooth speakers, or in my usage case, connecting to cameras.

Sony's Playmemories app requires a few more steps than Android (connect to camera's wifi network in settings, launch app, wait) with which you can just touch the phone to the camera and you're good to go.

It could open up a new ways for devices to interact, e.g. you touch your phone to an Apple TV to start mirroring it right away. I see countless possibilities for home automation.
 
NFC could also revolutionize door access. At my work and apartment building, I need to carry a different HID key fob. It's the most first-world problem ever, but it would be awesome to just use my phone. It seems HID is already aware of the potential:

Also, it would maybe help with home automation. Tap to get in your door, then the lights come on, A/C, etc. Tap when you leave to lock all your doors, shut all lights off, etc.

Thanks for a jumping off point. This brings up why many people are confused about NFC. It has multiple capabilities:

RFID tags - Back compatibility with RFID. NFC equipped devices can read custom RFID tags, which people use to trigger preset functions. E.g. turning on Bluetooth when they enter their car.

Mobile Payments - Contactless payment compatibility. NFC equipped devices can interact with contactless payment readers in stores or transporation contexts, but with much more capability than a mere card. E.g. present coupons, select correct account, etc.

Data transfers - Peer commmunications. NFC equipped devices can talk to each other, using a standard NFC request format. E.g. bring two devices together to set up Wifi connections, data transfers, share web page, photo, video and other links, share map directions, etc... without having to do any setup.
