What is a "proper machine" exactly? Isn't it true that your gaming machine could be considered "crap" by some gamers?
A proper machine is a machine that can play the games I want to play smoothly at high settings ( ideally maxed out ) .
Bottom line: there is no "Minimum Specification" for a "gaming machine." A gaming machine is a machine you can play games on. There will always be bigger/faster/better machines than the one you game on. Always.
Agree that there is no minimum specification for a gaming machine but thats the beauty of it my friend. So many choices of hardware one can put according to one's needs. Customization is important for a hardcore/semi-hardcore gamer which PC gamers normally are.
Sure, new hardware comes out everyday like the sun but one does not need the absolute latest stuff to max out a game unless its Crysis. A 5870 is enough for atleast 3 years of heavenly gaming atm imo.
Having said that, Macs also have some GPU options which are capable of maxing out certain games but the point is, if you want to upgrade to play your game at max settings, you may either need to buy a new Mac or shell out money for an overly priced latest Mac card ( which is a generation behind whats out for Windows ) but also doesn't have enough power to max out the game you want to play. Plus it also depends on the quality of drivers from ATI / NVIDIA and how well Apple supports it.
That said: do Macs tend to fare poorly in this area compared to the average competition? Sure. Why Apple is always behind in the GPU department is a mystery that continues to baffle.

The day Apple puts out a customizable mid tower with more hardware options that are current in the market and keeps it sexy, you will see PC gamers buying Macs to game on primarily
But yeah, a company like Valve, which is one of the core PC gaming companies coming to OS X with Steam is a HUGE shake up for everyone.
