I've got the S3 w/o LTE. Will I need to make any Wi-Fi adjustments you think? Also, I assume I need to be on iOS 12 first?
Your phone needs to be on iOS 12 first then you can update your watch. I mostly have my phone always around my watch, hence turning the WiFi off was not a biggie for me, your mileage may vary.

Update:
Siri Watch face is taking a bit of time to collect data and update the watch face after update. Took between 5-10 minutes for info to start showing.

It was interesting to see with Beta 3 that they only list the Siri face as new in the face gallery And now 3rd Party Apps are listed and can be selected. Whether they work or not is another thing.

Siri face should be exponentially better with watchOS 5, and this beta version is my first roll with it, and I like what I see so far.
 
Like most Apple betas, one step forward, sometimes a step back. In Beta 2, my Activity complication would not update (workaround was to change watch faces then change back). That was fixed in Beta 3, however now Contacts aren't syncing now, which means my messages just show phone numbers instead of name or nickname.

Yes. My contacts are just numbers now. Tried resyncing and no luck.
 
I've been on the beta since it was released - with an S2. I'd say battery life is a bit worse. If your power is dropping, turn off wifi - from what I can tell, it will turn on again if it needs to (if it needs data and your phone isn't nearby)

As far as what network the watch hops on - I don't think you can tell which network it's connected to - just one that your phone knows about...

I'm not seeing any indication that there is anything wrong with Activity tracking on watchOS 5 b2.

Seems to me like Activity tracking is always a question mark, and all people need is a tiny seed of doubt to start reporting problems with it.

My problem with activity tracking - it doesn't seem very granular. For example, I was working out with the watch one morning, and my move and exercise circles weren't moving - and then whoosh - activity was halfway and minutes when from 0-30... Beta issues?

I'd agree with that - I think 'turning off' wifi in the Control Center is more a hint - 'stop riding the battery draining connection" - if that's a thing...

It could also be a similar action to toggling the CC wi-fi button in iOS. On iOS, it toggles wi-fi off until like the next day. Toggling that on watchOS could be disabling while in your current location or something. Earlier I toggled that button at home, then it was on again when I was at Subway. I went into the settings and turned it completely off.
