I have AW series 3 lte (but lte not activated). I find the exercise detection when I am walking around inconsistent. Sometimes it will detect exercise in 5 minutes, and sometimes after 15 it will not detect it at all.
Same here. Maybe just affecting the LTE ones.

S3 LTE here, not detected one bit of activity yet in over a week. I walk the dogs every night at about 11pm for 2 ½ miles or so. It does detect though the end of the walk if I eventually manually start it.

Beta though, so hopefully get better :)

Coming from a Series 2, are there any differences (be them minor or major) (be it features, bugs, or anything else) between watchOS 5 on that device and the Series 3 (GPS + Cellular) that I should know about?

This is new.
I was asked if I wanted to install a software update for watchOS 5.0. This request came from my Apple Watch. The choices were install tonight or remind me later. I chose the install option. Then I typed in the passcode of the Apple Watch. At night, I set my disconnected yet nearly fully charged iPhone nearby. I set my Apple Watch on its charging cradle. The next morning my Apple Watch was updated. This was all done without doing anything on the iPhone.

I experienced this as well. Quite nice.

I have a brand new Series 3 LTE here with me, and it downloaded the watchOS 5 beta 4 just fine, but now it's stuck at the Preparing... stage.

EDIT: Force quit of Watch app and force restart of the watch itself did the trick.

Really hope sports scores is 100% working in this beta. I love the Siri watch face but its inconsistency has been the one thing that's annoyed me. I'm aware such is life as a beta user though.

Make sure the FaceTime app is installed on your phone. Even though it is a redundant app from the phone app, it is required for walkie talkie to work. If you deleted it, you can redownload it from the App Store
Can confirm this worked. Facetime was not installed on my phone, nor was walkie-talkie showing on the watch. Downloaded Facetime on my phone and BOOM - Walkie Talkie showed up on my watch seconds later.

Is FaceTime set up on your iPhone? The walkie-talkie app uses FaceTime audio.

Omg thank you so much it works all this time I thought I didn’t need FaceTime app thank you so much

Walkie talkie bubble notification at the top of main screen won’t go away for me now after briefly using it.

Edit: Nevermind. Set myself to not available and it’s gone. First time I’ve messed with the app.
