I use the fermented version of this recipe. I tweak it to my taste and replace the sugar, since I don’t eat it. It’s delicious, way better than store bought.
As for the burger sauce, I just sort of throw stuff into a bowl and adjust to taste.
Cheddar cheese, meat patty, bun and that's it. I'm a simple person. I let the meat and cheese do the talking. If a burger needs anything more than that to have an amazing taste, it's not a good burger at all. Heck, doesn't even need cheese. Best burger I had was in London at a Gordon Ramsay restaurant and it was delicious with good quality ground beef and perfect seasoning.
I am going to London on the 12th for a couple of days before I catch my flight from Heathrow and I'm really interested in visiting that restaurant you're talking about. Would you happen to remember the name or the location? I'm a huge fan of good (non-McDonald's-tasting) burgers
I like my hamburger--if home made--with lettuce, pickles, a big slice of tomato and a little ketchup.
There is a place nearby that makes a killer burger - my new favorite. It's topped with pepper jelly and Thai peanut sauce. Amazing!

No mayo or mustard?
Mayonnaise is for a regular sandwich, and mustard is for hot dogs. My suggestion works great for hamburgers of the homemade variety.
I usually have lentil burgers or bean burgers although once in a great while I'll eat an Angus burger. i put on diced sauteed onion, mustard, ketchup, dill relish, a splash of worcestershire (Lea and Perrins, yes) some Vermont cheddar and serve on a lightly broiled kaiser roll with some lettuce. By time I have all that put together I feel like I should have been paid to assemble it..

What unearth is A-1 sauce? I have never heard of it.
It's a steak sauce similar to, yet still different from, HP Brown Sauce.
Ah, thanks for the explanation - given that I am from Across The Pond, (and have never visited the United States) there are culinary (and cultural) peculiarities in that society and country that I have never, ever, heard of.
