The ‌iPad Pro‌'s display refresh rate changes on the fly depending on what's being viewed, which conserves battery life. If you're watching a movie or playing a game, for example, the refresh rate is at 120 Hz

I understand why games would run at 120 Hz, but why would it need to run at 120 Hz to watch a movie, unless you're watching a 120 fps movie (as far as I'm aware these are either extremely rare or don't even exist)? Wouldn't (commonly) 23.976/24 Hz or 29.97/30 Hz be more appropriate, and save battery?

Perhaps you are the only one that doesn’t realize the iPhone screen does show video without cropping because it isn’t possible to fit 16:9 video in a 19.5:9 display full screen without cropping. So you get full 16:9 uncropped video with the notch not affecting video at all on the iPhone.

I meant that it leaves wasted space.

It’s about time the industry got it’s act together and led us out of the 24fps movie nightmare. 120 should be the modern standard, sort of the way 1080p is. But aspirationaly 240hz and 480hz are like the 4k and 8k refresh rate targets. But we’re limited in the data bandwidths of HDMi, which is why HDMi 2.1 will help us have higher bandwidth for either 8k 60hz or 4k 120hz, and 4k 120hz is the sweetspot in my opinion. With faster wifi, 5G, Starlink, or fiber optic we could overcome the bandwidth limitations of HDMi. Fiber optic seems like the no brainer replacement of HDMi as it’s backwards compatibility potential is excellent. The more content And devices moving to 120hz the better.
