Sauté in butter, serve with roast potatoes, and a green salad, or a tomato and cucumber salad.
On mu mind, today, are oxtails, that have been happily bathing in marinade for the past 18 or so hours.
In around two hours time, I shall brown them, sauté some onions, and add stock (and the marinade) to the oxtails, letting them simmer for the next five to six to seven hours, whereupon diced tomatoes, and parsley, and - perhaps - butter beans, or cannellini beans - shall be added.
Rice, rather than potatoes, shall accompany the oxtails when they are ready.
