Boring colors are more "Pro". Phil says the new space grey is "very Pro".

It's your choice how Pro you want to be.
because pro buyers are more professional and see the phone as a tool
non-pro buyers are students or folk for whom a phone is just an accessory, and they require more ways for it to be fun!!

I don’t know though, it seems Apple has been fairly flexible with offering a plethora of colors with the iPhone XR and now the iPhone 11 to attract the consumer. I mean this is the most color options they’ve ever provided for that phone model since the iPhone 5c.

Those stereotypes didn’t seem to apply to the XR though as it seemed to appeal to just about every demographic society could throw at it. Even the wealthy bought the XR.Historically, Apple's has tended to offer more and brighter color options for lower-priced products, and fewer/more muted color options for the higher-priced products. Since they haven't changed that pattern, I'd assume it's been working.
I think Apple's first serious foray into color was the January 2004 iPod Mini, available in silver, gold, blue, pink, and green. However, those shades were relatively pastel. Colors for iPod Nano and iPod Shuffle were a mix of bold and muted. The original Bondi Blue iMac (1998) could be seen as elegant compared to the 1999 iMacs in Strawberry, Lime (we had Lime), Tangerine, Grape, and Blueberry. Of course, bold color statements are fine for the kids' room; note how iMac morphed into neutral white and then oh-so-elegant brushed al-U-min-ium when the living room and business office became the target market.
If you want to deal in stereotypes, kids and young adults tend to be more interested in bold colors. As we get old and gray we add a bit of that gray to every color we encounter. ;-)
While there are certainly wealthy people with flamboyant taste in colors, on the whole goods intended for a wealthier/"classier" audience do tend to be more muted. That's probably a chicken/egg situation. Did marketers' choice of "upscale" colors train us to expect "elegant" colors to be muted, or did marketers learn from their customer's requests/taste? It's pretty clear that "Old Money" uses "elegance" and "good taste" (including muted colors) to distinguish themselves from New Money. "One must not draw too much attention to oneself!"

You've just given a perfect example of subjectivity. I rather like the colors offered for the Pro phones.
Some people might find them boring. I find them classy.
Some people find the crayola color palette of the 11 fun, and while they are, they don't represent the kinds of colors many of us want on our phone.
