So the main issue is price? If a Mac Studio + Studio Display + Keyboard + Mouse, all from apple, cost the same as your inflation adjusted iMac, would you be happy?
Yes. But that will not be the case ever. That is why 27-inch iMacs were always best price / performance ratio. And if they really decided to kill that lineup, then I hope my Intel iMac will last me for at least 5-6 more years.

Which was just an improved iPhone 13 which was just an improved iPhone 12 which was just an improved iPhone 11...

It's been this way for a while, and it's to be expected. All tech goes this way. Once you harvest the low-hanging fruit, you focus on iteration. macOS 10 was the same way: pretty major leaps in the early days, especially between Jaguar and Tiger, then it started to slow down a little.

Correct it's also called diminishing returns. Once a certain tech reaches maturity, there's only SO much you can do with it.
