is it still "dangerous" to download the beta watch os, because of bricking?
No. Apple Stores can now restore inhouse assuming something goes wrong, unlike the old days when you had to mail the thing into Apple and hope they didn't lecture you about running Beta software without a dev account.

No offline maps on iPhone / Watch = stay with awesome WorkOutDoors app or Open Street Maps (I.e Organic Maps app)

Edit: I was wrong there will be offline but for AW offline maps you need iPhone around… so pointless
