I'm seeing the same issue as OP. The Mail app pops up regardless if it's "hidden" (i.e. I hit the red button to close it out of the window) or if it's visible in its non-fullscreen form on the desktop. It pops into full screen and takes up the right side split view when this happens, very frustrating. I've seen this happen on older updates before but they were incredibly rare; after updating to 10.14.5 this happens about every 10-15 minutes.
Seems to be a widespread bug.

OK this is anecdotal but today I closed out of the Mail app with an email selected (I'm an inbox zero person so my inbox is usually empty and the Mail app would get closed or left on the desktop with no mail selected, so I went to the archive folder and selected a random email), and it hasn't popped back up in about 2 hours now. Fingers crossed that this remains the case.

Edit: Never mind it's back. Dammit Apple.

The issue exists for a few years now. It happens when Mail is unable to connect to one of the mail servers and shows a connection error in the top right corner of the mail window. Because the error notification is integrated into the main application window the whole window pops up, when there is a connection issue. Usually the error disappears after a few seconds and only the window stays open

Yup, was about to say this myself. It's been an issue for a few years... but got WAY worse with 10.14.5. Oftentimes, the error has already been resolved/disappeared by the time the Mail window opens, so it just looks like Mail opened a window for absolutely no reason.
 
I always struggle when trying to describe an issue like this to Apple in a bug report without sounding crazy. But at the same time... they use Macs and this issue is pretty visible... how could they not already know about it?

It is not that common. It never happened to me, for example. They may not have a mac where this exact issue is happening, however common and persistent it is for you and group of others. I feel with you guys. I am just explaining that there are many without this problem.

Just guessing but they might've checked in a hacky fix for 10.14.4's Gmail bug that made a lot of people—myself included—fail to receive Gmail messages. I've switched over to using Spark's email client for now until they resolve this. I'm not a fan of Spark's data practices but the Mail app has gotten really annoying to the point of disrupting my productivity (I code in full screen)...
 
Hi, I have the same problem. Mail pops up randomly. I tried the safe mode, I created a new account, the problem is still there and it started after the last update...I chatted with apple support and it was just a waste of time. I tried with more operators and at the end of the last attempt they told me an engineer will call me the day after at 10 a.m.. I have never received a call. Quite disappointed. I had a mac from 2007 t0 2017 and it worked fine. I have never had a problem. Last November I decided to buy a new one after fighting with Ubuntu for 2 years, not really happy with my purchase.
I think we have to wait for the next update and hope it will solve this issue.
 
I cancelled all the accounts in Mail, quit Mail and now I use Outlook. It works smoothly.:) I have never thought to be forced to use a Microsoft app in a Mac.

Same problem here on iMac and on my new Macbook Pro I got last week. On both computers Mail app randomly opens (multiple times per day). I use two accounts (iCloud and Gmail/G Suite). Really annoying :-(

I have been having this same issue since Yosemite on my 2009 iMac. Now, it has gotten so much worse in the 2019 iMac with Mojave.
Looked everywhere to find some kind of fix, including the infamous Google calendar syncing issue (never used it and always disabled).:(
It is getting really annoying.
Sadly, MS Outlook 2019's UI is worse than 2011 where it defaults to the main email account ONLY.
I can have all the accounts lined up on Outlook 2011.
 
One potential fix for this issue is to set up gmail access as an, 'other account' in internet accounts. You'll need an app specific password from google account settings to do it.

Go too myaccount.google.com -> security-> app passwords for that.

This fixed the issue for me but I don't have any other google products connected, and I removed the google entry for my account in internet accounts completely, so I don't know if it'll work if you're connected to say google calendar.
