A few features I've found myself:
1. When you are zoomed into a column on Safari by double tapping, you can simply double tap the bottom of the page to scroll down more. I find it much better than scrolling with your finger as you don't end up scrolling off to the side.

2. When navigating multiple windows in Safari, you can simply tap the window you want, on the left or right, instead of swiping. You can also do this on the home screen, by tapping on either side of the screen, just above the dock. (This one can be a little difficult to nail).

3. If typing on the keyboard, and you want an accent, you can place your finger over the letter on the keyboard you want an accent for and hold it there. Eventually, a menu will popup with various accented versions of that character. Furthermore, if you want a symbol, you can touch the symbol button, and without removing your finger from the screen, move it over to the symbol you want, and release.
 
That is the handiest thing in this whole post yet, thanks for the info.

Also:
1) In the stocks application, the price of crude oil is the symbol "CLJ08.NYM" and the price for gold in US dollars is "XAUUSD=X" (user davidy brought this up)
2) I love webapps, but what is handy is data:urls...some webapps can be saved using them. There is a webapp that does them...someone wanna provide that? I have a guitar chord webapp saved like that.
3) The twitter is actually pretty handy (the little speaker for alarms)
4) Turn off the wi-fi to save power, and put brightness to a minimum and turn autobrightness on for even more powersaving.

I've only seen this since the 1.1.4. update:

When the iPod is in Cover Flow, select an album cover somewhere in the middle (any will do, as long as there's some covers either side). As soon as you select the cover, place your finger over the covers seen to the left of it and keep it there (you should do this as the 'cover flip' animation is still visible). Quickly flick your finger to the right and the covers should start moving behind the one selected. If you don't do this at the right time it will merely exit the selected album like usual.
 
Make Podcasts Play One After Another

On old iPods, if you selected a Podcast, you'd hear one after another, like a playlist. Now they run one at a time. Do this to hear all the podcasts of a certain kind in a row (so you don't run off a cliff while driving, for instance).

This is definitely a bug. The podcasts do progress from one to the next on my wife's iPod Classic, but not on my Touch.

I do have a workaround for audio podcasts.

1) If you tap on the center of the album cover of a playing podcast, the play controls come up near the top of the screen. Note below the scrub bar it says "1 of 1". That's the source of the problem.

2) Now, tap on the list icon in the upper right corner. You can now see all the other podcasts from this channel.

3) Choose any OTHER podcast from the list, which will now begin playing. If you tap and check the play controls now show it has the list right, ie ("3 of 77").

Now it will play through the list correctly.
 
I am having a hard time reading some of the web pages even if I change the direction.
I just realized yesterday that I can make the part of the web page that I wan to see larger.
By doing what they tell you will work on the photos but it also works on Safari.
Put your two fingers together on the part to enlarge and spread them.

Here's one I found by accident today. If you unplug your headphones (or casette adaptor) it automatically pauses the music you were listening to.

Was that in another version of iPod? I never noticed if it was.

I noticed that in my 5gen ipod.
 
I noticed this the other day and I don't think anyone has mentioned it.

When scrolling through home screen pages (swiping left or right) you can click on an icon from another page during mid-scroll. Here's how you do it.

Use a finger to expose only PART of the next page... then with another finger (make sure you lift your first finger) tap an icon on the page that is partially exposed and it will launch. I'm not sure how useful this trick is but, it's neat if you don't feel like letting the slide animation finish.
 
Email folders How to add.

Does anyone know how to add an email folder under inbox, or other,
would like to have more folders. I have to keep the ones I want in the "sent"
kind'a would like to have them labeled to my liking.

Question 2.
How do, Can I, delete a single photo, with out editing the (Adobe) Album, and re-syncing to the iTunes..

Hate to bring you down, but there are many topics dedicated to it, and it's been in the "iPod touch tips and features" thread that's stickied at the top of this board for months now.

There is no way to actually add folders on the touch it-self. From what I've read if you set up mail on your computer to use iMap (If your mail provider supports it) instead of POP, and set up the folders you want in Mail, it will sync the folders to the Touch since iMap stores the folders on the Mail server. I haven't tried it yet.

I have, and it works great. And since you can't put mail rules into a touch, the way it seems to work is if you check mail from your touch before checking from your main machine, then you get no rules applied. But once you check mail from your desktop machine, the rules are applied and you see the results the next time you check mail on your touch.
