A few features I've found myself:
1. When you are zoomed into a column on Safari by double tapping, you can simply double tap the bottom of the page to scroll down more. I find it much better than scrolling with your finger as you don't end up scrolling off to the side.
2. When navigating multiple windows in Safari, you can simply tap the window you want, on the left or right, instead of swiping. You can also do this on the home screen, by tapping on either side of the screen, just above the dock. (This one can be a little difficult to nail).
3. If typing on the keyboard, and you want an accent, you can place your finger over the letter on the keyboard you want an accent for and hold it there. Eventually, a menu will popup with various accented versions of that character. Furthermore, if you want a symbol, you can touch the symbol button, and without removing your finger from the screen, move it over to the symbol you want, and release.
