From past experience I’ve made changes to Hold For Pickup anywhere from when it first hits MyChoice up to a day before it was to be delivered without any issues (when doing it same day it’s been delayed but I’m usually able to go pick it up at the CC if needed, just need to call them) - but again it depends on the particular UPS Location and how they process it.
I go into UPS to change my delivery to pick up at a UPS location here in St. Louis. The first location that displays is our main UPS CC, but it is grayed out and listed as unavailable, but all the other locations listed thereafter are UPS stores and are all available. That seems odd. I've picked it up at the CC last time and never had any issues. Maybe does it have to get into UPS hands or the United States before that option becomes available?
Pretty sure the only thing you can do is have it held at UPS (ideally a UPS Customer Centre/HUB). I don't think they'll let you change the delivery address after the fact as that will raise a billing flag.

Another question for you guys: I have two numbers on my ATT account. I had problems ordering with my number so I ordered it under my wife's. However, I paid in full and with no contract or anything will I have any issues activating the phone under my number when it arrives instead of hers? Do I just need to switch the sim with my current sim card in my iphone 7 plus?
You have two options, you can activate the phone which will deactivate her sim, in which case you'd just need to swap sims from her old and new. Or, just pop in your old sim so that hers isn't deactivated.
You need to call AT&T before you power it on so they can change the parked activation of the SIM from your wife’s number to yours.

is this standard operating procedure for a CC hold? Does it update once clears customs or just stay that way until ready for pickup? MOST BIZARRE Thing ever, three different dates.

I was banging away when preorders went live but didn't get through until about 35 minutes after orders started. Apple store says 5 weeks with a December 5-11 delivery date. (AT&T, 256GB, space gray)
