I don't think it's limited to Ultra 2 and Series 9 models. I've had this issue happen with my Ultra 1. At times apps I didn't open are open.
I have too have started to experience similar issues with my Ultra 1. It mainly takes me to an sos page where I can activate the siren and more. Today as I was out shoveling snow, the siren actually got activated. It happened multiple times. I think this started to happen after a recent software update.
 
I had this happen a few months ago on Ultra 2. I was running and the workout app worked normally for about an hour. After that it started randomly tapping the screen and I didn't know what was going on. It did that for about 30 minutes at random times. It never happened again after that. Hopefully they can track down the issue and fix it. I'm already on the fence about using the Ultra 2, but this would suck if it happened in a race.
 
I had this issue happen. How I fixed it? Used a rubbing alcohol wipe on the entire screen and crown. Then it stopped doing the ghost touches. It was super weird. But no issues since. Thinking maybe something got on it that was causing static electricity to hit a completely different area? Not sure.

Rubbing Alcohol Wipe - 70%. Now you don't have to try that, but that's my 2 cents.
 
This is not only an issue with the newer watches because i have still series 4 but even with that i have the ghost function activated. My watch and headset and with my phone goes call someone or opens an app. So i think the developers got more work to do. Somethining more then they expect because more series is infected.
