My Predictions:
iTunes 9
We'll get Twitter and Facebook integration, as well as Blu-ray support. It'll be faster, and it'll be 64-bit. Possibly some updates to Genius playlists as well.
iPod Touch 3rd Generation
We'll get a 3.2 MP camera with video recording just like the iPhone 3GS, a mic, same faster processor and more ram like the 3GS, the oleophobic coating on the screen, and a GPS for geo-tagging and use with Maps.
We'll also get the updates brought with iTunes 9. Unfortunately no OLED screen.
Price and capacity:
I see three possibilities.
8GB - $199
16GB - $279
32GB - $349
or
16GB - $229
32GB - $299
64GB - $399
or
16GB - $199
32GB - $279

I think the second option is the most likely. I really can't see them keeping the 8GB on the 3rd gen. They may keep the 2nd gen 8GB for $179, like they kept the iPhone 3G 8GB.
iPod Nano 5th Generation
Not much new here, except for the camera. Even though there have been reports of the 3.2 MP camera, I think we'll get a 2 MP camera like the iPhone 3G. No video capture here, I don't think.
We'll get the iTunes 9 updates like the iPod Touch 3rd Gen.
We'll also get a capacity bump for the same price.
16GB - $149

iPod Classic 7th Generation
I'm still debating whether it'll get a camera or not. I'm guessing it will, but it'll be 2 MP like the Nano. Also iTunes 9 updates.
Capacity upgrade, but the same price.
160GB - $249
And Steve Jobs will be back to introduce all of this.
I'm guessing the "one more thing" will be the arrival of the Beatles on iTunes.
