Apple is luring us into Family or Premiere so we get everything set up and then they’ll raise the bundle prices after one month.

I’m kinda the same with news, and fitness. I find the news app clunky, and not that well laid out. I’d love to use the fitness app, but don’t have the setup at home to utilise it.Apple forces their "Arcade" into any plan. For those not interested in that "feature" then the plan will never be worth the price. If they allowed you to select among services so News could replace Arcade, I would join right up.
Related, I don't need 2 TB but do need more than 200 GB, and I'm just one person, and I don't care about News+ or Arcade - if they'd give me a good price on the base Apple One plan with more storage, I'd be very interested - but as is, I'd essentially have to buy the top-tier, getting services and multi-user support that I don't need, for extra money. All I want is more options on iCloud storage tiers to get the price lower.

They want you to pay for services you won't use, hence the bundle. For now there is no price hike for Apple One. Will not be long before it sees a hike. Might not be immediate but will surely happen. Thankfully neither TV+ nor Apple One had any change in price till date in my country.
Also would like to see a customizable Apple One plan, where users can select the amount of iCloud storage required rather than having access to Arcade. Unlikely that this will ever happen.
