Apple forces their "Arcade" into any plan. For those not interested in that "feature" then the plan will never be worth the price. If they allowed you to select among services so News could replace Arcade, I would join right up.
I’m kinda the same with news, and fitness. I find the news app clunky, and not that well laid out. I’d love to use the fitness app, but don’t have the setup at home to utilise it.


I would like to see bundle service where you pick 3/4 or 5 options, to customise the experience.
 
All I want is more options on iCloud storage tiers to get the price lower.

I don’t need 2 TB but I do need more than 200 GB
Related, I don't need 2 TB but do need more than 200 GB, and I'm just one person, and I don't care about News+ or Arcade - if they'd give me a good price on the base Apple One plan with more storage, I'd be very interested - but as is, I'd essentially have to buy the top-tier, getting services and multi-user support that I don't need, for extra money.

For now there is no price hike for Apple One. Will not be long before it sees a hike. Might not be immediate but will surely happen. Thankfully neither TV+ nor Apple One had any change in price till date in my country.

Also would like to see a customizable Apple One plan, where users can select the amount of iCloud storage required rather than having access to Arcade. Unlikely that this will ever happen.

I think it would be better if one could mix and match products on Apple one, at the moment, if you only want Music, News and 2TB iCloud, the only option is the top tier one which is the most expensive one.

They want you to pay for services you won't use, hence the bundle.
 
I'm going the other way and forcing my family members to do without and manage features that are available for free (with or without ads)

Apple Music = already have 7tb of music downloaded that can be streamed
Apple TV+ = FreeVee + a dozen other ad driven streaming content, OTA/4k/ATSC 3.0 with 60+ channels
Apple Arcade = use the PS5
Apple News+ = X
Apple Fitness+ = tons of free YT and other non-interactive training instructional videos
iCloud+ (2TB) = monthly backups to the NAS, iMessage trimmed to 30 day retention

savings over the years is HUUUGEEE
