Apparently nothing.
So assuming they release at least Apple Pay Cash in iOS 11.1, is it just something they flip the switch on their end, or will there probably be a small update for us beta testers when the release iOS11 in order for us to use Apple Pay Cash?

In regards to the user base, I know it's basically 50/50 with wanting it kept as is or changed back to how it was in 10.3.3, but I'm holding out hope that CC Wifi and BT toggles are reverted back to how they were in 10.3.3 at some point.

No clue. Apparently, some are saying that the stuff is not inside the build.

This is simple. iOS 11.1 beta 5 is the final release that it’ll be released for iPhone X and the rest of iPhones on Friday or before.

iOS 11.2 is the next release solving and bringing new features.

I think.

This might appeal to some of you.

It was posted above about not upgrading to iOS 11.2 just yet as we won't be able to setup the iPhone X from a backup. Makes sense, right? Well, I just installed 11.1 b5 back onto my 7+, forgetting about having to reset my Apple Watch and re-pair it, etc. . . Well, after I restored from an iCloud backup, it automatically started syncing my watch, without having to erase it. This is certainly new from any previous versions of iOS that I have used. Certainly a welcome addition.
