It seems you can't just delete the beta profile to get this update to show. You have to reboot as well. Now installing on the iPad Air 2. 275.1 MB.

Not so sure. There were what 10 beta releases for this version which tells me they were ironing out as much little nuances as possible against an scheduled time release date which they put themselves in to be honest. I'm ok with bug releases as long as they are improvements. Nothing is ever finalized.

Apple had to create a GM version of iOS 11 to send to manufacturing for the iPhone 8. They have been working on this 11.0.1 update longer than one week.
