I'm on the latest beta of iTunes 10.5.
I am not sure ... don't have my home Mac in front of me. But it's not that big a deal to switch between backing up to iTunes or iCloud. It's on the device summary screen in iTunes. Just a little selection box that says "Backup to iTunes" and another that says "Backup to iCloud". It's just a click to switch.
Note: iTunes 10.5 no longer requires or includes QuickTime.

Absolutely not true - Your device will sync automatically when plugged in, but you can kick off a wireless sync any time you want by manually pressing the "Sync Now" button
Mmm, Not for me. Is 10.5 Lion only?
Its only showing on the USA page .. the UK page says coming soon? Surely there the same.
I downloaded iTunes 5.0 and then downloaded a song on my iPhone from iTunes.....it automatically synched to my MBP smooth as butter.
