It isn't frequently accessed, relative to what you're clicking on within a particular media category. Unless you don't know what you want to do. In other words, when I'm listening to music I might click through a lot of artists or songs. I won't be jumping often between Music and Movies, or Audiobooks. I might make a hundred or many more click choices within Music before deciding I want to watch a Movie many hours later or the next day.

Sounds like you rapidly and often choose between Music, Movies, and Audiobooks when you use iTunes. I suspect most people who open iTunes to listen to Music, pretty much leave it there while clicking Music/Artist choices. Ditto for other categories.

Menu choice blink confirmation are used in app Menu Bar choices, because when you let go of the mouse and the menu springs back there is otherwise no menu choice confirmation - if not careful you may have made a choice in error and not know it.

A dropdown shows the choice on the face of the dropdown - confirming your choice - within milliseconds of letting go and staying there until another choice is made. No blink is necessary, needed, or wanted.

Yet the old system allowed you to to use iTunes how you liked (turning the selector into a droop down menu), and allowed us to have it as always clickable, the new system only leaves it how you like it.

We're happy that the new system works for your use case, for some of us, its a poor design choice that makes things more annoying.

Absolutely... Except what you call fashion or cosmetics, I call clean design - something I and many others place a high value. Unless you're changing Media categories every 5-50 clicks, I see no cost in usability

The old system was just as clean - you just had to un-tick all the categories except music and it was a drop down menu!

You see no cost to usability simply because you don't use iTunes like some of us do! I swap a lot between views, and a drop down menu is a less efficient and more annoying way of doing it. The old system allowed it to be done either way which was great.
 
As expected with Apple these days, they only made things less user-friendly in trying to make things "simple".

Now it takes longer time (more clicks) to switch between features, like Music and Podcasts.

Yes, it's more "intuitive" now if you have never used the software before, but they should have kept the icons instead of placing everything in a roll-down box.

Agreed. They should have made it an option to have the icons, just like how it used to be you could have a drop down menu if you wanted.
 
In my opinion, overall, this layout is simpler, it's easier for people to find what they're looking for. It comes at the expense of some sticking points, such as replacing the individual buttons for media selection with a drop down menu and some options being moved to the menu bar. But design, as life is a series of compromises. Visually, I slightly prefer the old version but I don't this one is easier to navigate, thus addressing one of the key concerns of new users.
 
Glad they fixed the performance issue when scrolling New or For You sections. It was awful, but now it's buttery smooth as it should be on a 2015 rMBP..

The only 'Delete' that I found is in menu 'Song' and it is deactivated...

In all seriousness... good to see they're going for simplicity. Hopefully it helps.

I miss the days where finding something in iTunes only took 20 minutes, rather than the 2 3/4 hours it now takes. This is all good news.
 
when i click next or back like skipping tracks now. the click feels more gradual on my force touch trackpad. this is normal right? trackpad is normal everywhere else

It's in songs view, like i stated earlier ;), you can turn off artwork in the view options, either under the view menu item or by hitting command-j. You have to to show those tabs, you can do this in view options as well.
