I just started, download is incredible slow. Guess I should have waited based on everyones failing here so far.

That's not how internet recovery works....it installs the latest version of macOS that is currently installed on your Mac. If you upgrade to Big Sur and then run internet recovery, you should, in theory, be able to reinstall Big Sur.
What if you have no OS on your drive? Won’t you then get the most recent OS version to install?

I just got the installation failed message after downloading 12.18GB. And when I try to start again, it shows me the installation error message again. Had to restart the mini, in order to start the download again.

Got to 4.5GB download....failed.....restarted at 2GB.....got to 9.5GB....failed.....restarted at 2.5GB....now back up to 5.3GB.

Tedious to say the least.

What I find weird is that the software update menu shows progress (already up to 12 GB once, then failed), but I actually only downloaded 2.5GB in the last hour (as listed with iStat).

Just errored out for the 4th time. Now it errors out instantly when clicking: Upgrade Now -- for my wife and I.
