It's there... You forgot to scroll down to the Release Software section. It's the fourth one down on the list.
And FYI, it's the same build as the last beta: 4.1(15R846).
 
This watch is starting to become a more interesting device to me now. I think in a couple years, when battery life has improved to a point that LTE doesn't drain it completely, and it can have a few days of life with usage, then I will pick one up. For now I am going to wait.
I get 2.5 days of use out of mine, so Battery life has improved greatly. Mind you, this is also while using an Android phone, with my iPhone left at home. In this situation the watch is using it’s cellular radio more, or, wifi connection through my Android phone.

With the iPhone in tow, I Easily get 3+ days of battery life out of mine, including a couple of workouts and a bit of Cellular time away from my phone.

Hoping battery life improves more, as it did in the case of my Series 0.
 
Presume nothing has been done to restore access to iTunes playlists from the phone?

Apple have killed my original series watch by removing this functionality.

Seems like they are trying to make the Watch more of a standalone device than a "partner" to the iPhone. I believe this is the direction being laid out by removing streaming from iPhone to watch with music.

They need to sell to more than just iPhone owners.

Do you actively avoid charging at night because of this? My S3 goes on charger before bed every day, even though it's still on about 80%. I know that can't harm the battery, but my biggest worry would be running out of juice half way through day 3 or something.
 
Hope this helps with battery life... my Series 2 has taken a noticeable hit with watchOS 4, even after doing a full factory reset from scratch with no backup (RIP Activity Achievements)

Also some bugs where it wouldn't register as standing for several hours until the watch was restarted, which is super annoying because it takes FOREVER to restart.

You could have stored the achievements on the cloud in the health app. I just got an iPhone 8 plus which I set up as new and also reset my Apple Watch. I made sure that my health data was in iCloud (not iCloud backup). Once I set my new phone up the achievements were synced to the phone. The only issue now is that the health app shows the newly paired watch as a new watch.

Which might be ok if you have the latest hardware and a data package and Apple Music. And a 100% reliable and unlimited data connection. But the vast majority of us don’t, and many will have neither the means or inclination to upgrade.

This has severely dented my confidence in Apple. They’ve really given the finger to owners of older hardware that has tiny internal storage. Even the internals of the new model are rubbish compared to a phone.

Kinda.

I don’t wear my watch at night (bothers me to have anything on my wrists), and often am too tired to place my watch on my charger when I eventually go to bed.

Do you have an LTE or just GPS. I have the Nike version which is only GPS. It goes for a full 2 days and I also use it to monitor my sleep with it which usually takes 6-10% of the battery. If I didn’t sleep with it I could get 3 days. I workout an hour everyday and some days a little more. Very happy with the battery life. Just let go and if you are afraid have a battery complication that tells you the remaining battery.

Okay so immediate issues with Apple Music streaming: it takes ages to start playing a song, a good delay of about 30 seconds for me (over WiFi), also no way of seeing 'Recently Added', also if you go into album view and select an album it'll immediately start playing the first song from the album rather than bringing up all the songs in that album for you to view.

This is all seems a bit confusing. Particular as there's no iCloud Music Library settings for Watch, as far as I can say. So my Watch still states no music has been synced with it, but I can see all my music by selecting Library.
