You can turn off Smart HDR too. I think the gen 2 of it (on the newer iPhones) looks better, although the difference is not huge. I'd happily trade slightly orange looking people to having beast dynamic range.
Smart HDR on the iPhone XS is very good for landscapes, sunsets, etc, but it is pretty terrible for skin tones in general. On harsh lighting it recovers too much of the highlights making people appear flat and often times orange. It is so bad that when I see such pictures, I can instantly tell it was taken with an iPhone XS.

They toned it down a lot on the new iPhones, though. It's looking much better.

More control is better.

Non-intuitive is available elsewhere... Keep it simple.

Last edit. And whenever someone will get hands on that can you try whether it can be used for getting better macro shots? On wide or telephoto lens.

So what will be next besides zoom and slownotion? Sports pics? Google is cooking something like that isn't it?

Why won't they activate this for xs max? The hardware can't handle it?

The hardware may handle it, but it will process much slower and the results won't look as good as the iPhone 11. Apple doesn't want people with the older generation to get inconsistent results, so they will just release it to the newest ones.

Also, money.

I don't see what's bad about wanting an option to turn something like this on/off. To each ones own. I don't know if I'd like it or not but I wouldn't be opposed to having a choice, myself.
 
Don’t software updates usually drop by now? How does The Verge know a beta is dropping today?

BTW, it appears Apple is trying to compensate for the smaller pixels in the Telephoto's image sensor by using Deep Fusion as the default.

I suspect they are doing that to counter the Pixel 4, which includes a Telephoto Back Camera.
 
Wish they fixed the image depth and focus when you zoom from one camera to another - images gets out of proportion in between lenses and sensors changes
