If your were backed up to external ASR volumes, its as simple as having a DFU restore done back to Monterey.

Usually if you don't know how to do this process you make a store appointment. Yes a DFU restore is a factory reset wipe all data. Use Migration Assistant to recover system settings/apps/data from the ASR volumes.
I had a time machine back up, so I was able to restore the files I needed from there. Once I knew how to do it it wasn't that big of a deal. But all of the other ways that were suggested, like "just opt out of the beta and download Monterery and install it", just don't work. The only thing that worked for me was booting to recovery and completely wiping the drive and installing from a USB stick.

Well dev beta 3 was released July 6th, with updated public beta 3 July 11th. Guess it was too good to be true to hope we see dev beta 4 this week. I guess at the worse we see it by Wed July 27th :D
