You have to create a mobileconfig profile and install it.

The mobileconfig profile can be created with

If you don’t want to install an app, you can copy-paste the text (Code:..) from the first post in TextEdit (Format – Make Plain Text) and save as Defer90.mobileconfig
 
Update 1:
None, i mean none, of this works for me. My bubble is back and all.
(Intego's firewall [blocking the 2 softwareupdate agents plus the knowledgeagent] does the trick though)
Am now wondering what kind of hardware the folks having this functioning are using..
On an M4 MB myself.

Update 2 and personal:
Having finally had some free time, i took a good long look at how/why/in what a way Apple updates. I mean a thorough one.
As such? Old dog i may be, but it does appear it's time to learn new tricks.

Removed profile, removed deferments; and shall be updating properly and regularly.
Rolling releases done right, aka if only i'd bothered to research before falling back to (useless in macos) old habits.
No need for any of this.. like at all.

All that aside, my thanks once again to bogdan for his assistance :)

If you don't set the defer delay to 90 days is it indefinite?
I'd honestly like to just pass on Tahoe for the foreseeable future (more than 90 days)
 
@turbineseaplane 90 days is the maximum. From Apple's documentation: "As part of the configuration, organizations can specify a custom deferral period from 1 to 90 days"
Install the second profile to ensure that your Mac doesn't upgrade itself to Tahoe.

@A.F I don't understand why it's not working for you. As you can see from the video in post 17, simply installing the profile makes Tahoe disappear. I have the profile installed and working on MBA M1 and Mac Mini M4.

I just block software updates via Little Snitch. No more nags from Apple.
 
No, it doesn't affect Sequoia updates. It only hides Tahoe for 90 days.
On two out of two Macs I've installed the Delay90 config on, it's taken away a System Settings notification badge for Sequoia updates. Is that to be expected? Not a major problem, but for one user I had hoped for continuing notifications.

That is not to be expected.
I have a virtual machine still on 15.6.1 and if I refresh Software Update (⌘R) or run softwareupdate -l in Terminal, the System Settings notification briefly appears and disappears by itself. I consider it to be a bug.
I tried deleting ~/Library/Preferences/com.apple.SoftwareUpdate.plist, /Library/Preferences/com.apple.SoftwareUpdate.plist and rebooting, but it didn’t fix it.

Wow, thanks. For the Mac I’m concerned about, I’ll just have to text the user or something along those lines. It might work okay in Sonoma or something, but that’s moot.
 
How can we defer forever if we just want to skip Tahoe ?
You install the SoftwareUpdate.mobileconfig profile, that disables the automatic download and installation of updates, and don’t update manually to Tahoe.
