It's a feature, you can remove apps from the dock and labels come back. Since docked items are considered to be your main points of interest and most used they don't need labels. At least hows how I see it. I wish there was an option to turn off labels but that will never happen.
No labels in the dock? That annoys me. Maybe it's a bug.
Not a bug. When you put them back in the upper part of screen they labels will show. The whole point is anything in your dock means you use those 4 apps constantly and thus you will know what apps they are without needing a label and thus being less of a visual distraction.

I wish the redesign would help with re-downloading purchased apps. Perhaps purchased apps, could have a search option, categories, 32-bit (legacy) or unsupported, and allow the apps to be rated (for your personal use) and tags.

Swiping down to get back to the lock screen is stupid. I never need to get back to the lock screen and now it's 2 swipes just to check notifications.
Well it's still only one swipe down to get to the notifications in the keynote. Just to get to older notifications would be two swipes. Since your newest notifications go on the lock screen until you dismiss or interact with them. I think it's a great consolidation.

Umm a lot of people... being able to 3D Touch deeper into Wifi and Bluetooth and actually pick which one you want/need at the moment seems like a huge oversight.

Why? What's the use case? I can't recall ever having to had to do that.

Yes! And an option for low battery mode in the control center would be beneficial.

If believe that's now an option, no?

Can anyone comment on how "Files" actually works? Can media be downloaded to it, can multiple apps access a single file maintained in the app without creating duplicate versions?

Still missing a fundamental feature here: be able to quickly swap from one WiFi network to another right out of the Control Center. Anyone else in the need of this?
Can't see that being a 'fundamental' feature as when people are home will connect to their home network, when at work, there work, and on the go it will popup allowing you to select one you want a coffee shop. Of course there are special use cases where you will want to change your network, but that definitely belongs in Settings and not in control center which is suited for common scenarios. And you can simply say, "Hey Siri, open wifi settings" and get to that setting page immediately as well.

Yes, just like in iOS 10 with iCloud Drive (which is now replaced by Files app) you can use the share sheet to save any file to Files app (formerly iCloud Drive on iOS). In iCloud Drive if you edit a file you only edit that single file, doesn't duplicate anything unless you duplicate it, just like on a Mac or a PC. Files would work the same.

Eh. I think a lot of people is being pretty generous. I own a lot of tech in my house and I don't find myself switching networks and bluetooth devices. Do you really struggle with that?

Idk what “struggle” means... but if I have multiple Bluetooth devices connected and different SSIDs throughout work and home...it’s annoying to have to dive into settings every single time. There’s already a ton of people on the forums wondering how this is such an oversight.

Like maybe only you in your bubble world need this. Never have ever thought about this nor have I ever heard needing this.

Just because you don't use it doesn't mean a lot of other people don't either. I don't use a size 10 shoe. That doesn't mean it's useless to make them.

I have heard the iOS now supports FLAC now with the Files app....

One thing I found to be very interested and, one could argue, a sign of things to come....

Let's say I have my iPhone 6 on the lock screen and a notification comes in. When I briefly tap on it, the locked padlock up at the very top of the screen wiggles, as if it's a declined password entry. Normally, I would think OS bug, but when the biggest rumored feature of the next iPhone is embedded Touch ID in the screen, it's very intriguing that the OS is seeing a finger on the screen and interpreting that as a password entry.
