Face ID... So it seems that iOS 15 updates are still available for models newer than iPhone 7 Plus except the iPhone 14 series...

Are we going to have iOS 15.8 or iOS 15.9 soon?

Nah, the iOS 15 updates will be security updates only, no new features. There could be a 15.8 eventually, only because they made it all the way to 15.7.9 with security patches. Also, I expect 15.7.1 to be the last version of iOS 15 available to devices that are eligible to upgrade to iOS 16. Security updates to iOS 15 will continue to trickle out as needed for the 6s and 7 series and the iPod Touch 7 over the next couple years though.

It may be but not when it comes to security and malicious attacks.
That’s why there’s 15.7.x.
iOS 16 means new code which means more chances for bugs.
You’re confusing new features with more security. And this is the reason any major version has the broadest attack surface compared to the subsequent minor releases where focus is less towards adding new code and more about fixing/refining.

Apple will arguably have to take a good hard look at themselves in order to fix this.

Users should take a good hard look at themselves and ask why they demand Apple keep adding new features year after year after year, but then expect 100% stability. Can't have both.

I don't think people demanded Apple for new features. Nobody was mad on Snow Leopard nor iOS12 where Apple said the focus was for stability and performance. It was Apple themselves that insistent in releasing new OS version yearly with tent pole features for their marketing. It is within Apple's own control.
