SO... A few months ago, I consolidated 2 separate Apple IDs. One was created many years ago for iTunes, before I even had anything other than an iPod. I had the same issue where beta was turned off, and I did not see an option to update to the release version.

I notice the login was showing my current Apple ID, to which I consolidated the previous account, but remembered that I had used the previous account (which was my "media" and "app purchase" account) to register for the Developer Program. I changed the login to that older account, and now I once again see beta options, etc.

I really hope this isn't a sign of a larger issue with accounts that have been consolidated!!
 
It's today's build. Apple has the ability to flash OS updates while still in the box.

if there is an new "emergency" build that is released between now and Friday, that is what will be flashed.
This doesn’t work outside of official Apple Stores, as far as I’m aware. Most iPhones are in transit now for people to get by the end of the week. Be sure that not all resellers have the capacity and the ability to install the new build while the devices are still in the box.

Also keep in mind there’s still a good amount of countries where iPhones are sold via third parties, not official Apple Stores.

Launched, and some irritating AF bugs still exist:
- Spotlight hold-down-to-select loupe = blown out. Can't read a thing
- Files app content still shows in Spotlight, despite it being disabled. Drives me crazy. I don't want to see every damn file.. I just want Spotlight to show my apps!
- "Old" keyboard routinely completely slips letters when repeating a word, intentionally, in a sentence

beta was turned off, no option to turn it back on, still stuck on RC with no option to update. Restarted the phone, still no change.
This was happening to me as well. Beta Updates showed as "off", but the option to turn on was missing. That is a bug. What eventually happened to me was the Beta Updates screen finally populated and showed that I was in the Public Beta--even though it previously said it was "off". (it was likely some backend server issue at apple where it wasn't showing your beta membership properly)

Now that it correctly showed that I was on the beta, I was able to turn it off, and the official iOS 26 release showed up.

That's what the main page of macrumors and some other sites looked just a moment ago on my iphone 16. Now it's gone, but it took about 10 seconds of playing around for that first visual bug to rear it's ugly head.
 
Hmm my contacts are not seeing the conversation backgrounds, despite both of us having the option turned on in settings, weird.
