Pick any 3 feature you'd like with iOS 5 and Steve will make sure they are implemented.

Mine...

1. Much improved notification system
2. Live Icons - That display information
3. Free turn-by-turn navigation with all bells and whistles of a GPS app with offline support, just download a map for any city or country and use it offline.

1. NOTIFICATIONS - Note to Apple check a Cydia tweak called MobileNotifier, it's a great notification system. The small change I would make it change the Notifications list from the Multitasking screen to the Spotlight Search area.

2. Live Icons - How nice would it be to have live Weather icon, how bout a live icon for ESPN ScoreCenter for the sports fans like me.

3. Wireless Sync/OTA Updates
 
Here are the top 3 things i'd like to see in iOS 5:

1. An excellent notification system
2. Change in UI (hate the grid-like style)
3. Lockscreen apps
 
1. Better notifications including status bar notifications like with OpenNotifier for jailbroken iPhones. Also a way to see all recent notifications would be nice.
2. Reply to messages (native messages app and app store apps, IM clients and such) from anywhere, even the lockscreen.
3. Google Maps updated to Google Navigation.

3) Touch settings (wifi bluetooth on off by touching status bar)
 
1. Better UI for task-manager (like maybe just dragging the app off the multi-task bar to quit it I think would be an improvement and a better way of displaying all the apps that are open). For that matter, better management of phone of apps and RAM (it does not do a good job, I find my iphone 4 gets very laggy if I just let iOS manage my apps for me).

2. Let icons show updated info (like the weather app update icon to show temp or calendar apps show the date on the icon).

3. Better notifications but actually leave the option of the phone giving you pop ups when notifying you (Sometimes I like that. Sometimes, usually when playing games, I don't).

Honestly, I mostly like iOS and am happy with it as is. But for improvements I could think of at the top of my head, those were my 3 (and the notifications I just threw in to have a third, the way they do it now does not bother me too much but I can see people's points why they don't like it).

1) Updated Notifications, like everyone else
2) Integration with iPad was a really good idea from that guy up there^ - something like pairing your iPhone to your iPad with Bluetooth and being able to reply to your SMS messages from the iPad
3) An update to the UI. I don't mind the grid thing they have now, but I'd just like something new. It's been the same basic UI since the beginning, and it's getting just a bit stale.

#1 is a given and #3 was mentioned above and is something I agree with. I wouldn't mind if the notifications were similar to Android where they appear in the information bar on top. Maybe they could use the unused space above the App switcher for storing said notifications rather than Android's pull-down bar. In regards to #3, it would be nice to be able to store data more easily like a flash drive. I have iFiles for the job but it's not as quick as plugging the phone in and launching it as a USB device like the Pre was able to do. Of course the Pre had its own share of problems.
 
1. Stacks. They worked amazingly on 3.X. And folders just suck.

2. Icon uniformity/Graphic Improvements. Look at the detail of the Safari icon, and look at the contrasting Voice Memos. I'd also like to see some OS X Lion UI hints here and there. The Aqua gloss is starting to annoy me.

3. Better Notifications.

Notification system seems pretty much a unanimous request, if Apple don't do something about it in iOS 5, many people will be disappointed.
