I successfully reverted to 8.0, which restored cellular service. However, it is telling me that my backup in iCloud can't be used, and I'm hosed.

Can anyone confirm that you can now simply hit update and go back to 8.0, my guess is no, that you have to download the firmware and manually select.

It's been pulled. So if you restore on iTunes, it will restore back to 8.0.
Surely you can still type in the passcode as a bypass around TouchID.
Settings -> General -> Usage -> Manage Storage -> then look for the iOS update and delete it
so if you hit update on 8.0.1, it will download 8.0 for you now?

Well no. Technically if you're running 8.0.1, it's newer than 8.0 so you're technically up to date already. It will only show 8.0 as an update if you're on an earlier version of iOS.
Restore to 8.0.1 through iTunes, then your backup will work and it fixed the cell connection for me
