I used to have unlimited, but actually went back to 2g. My iPad, however, is unlimited, and gets most of the data-intensive use.
 
I have the 5GB Tethering plan on AT&T. I got tired of worrying about throttling last year, and (before I jailbroke my 4S 4 months later), I wanted tethering after I had a situation where I lost my home internet for 3-4 days due to an outage. Sort of wish I had my unlimited back, but I'm surviving. I typically use 3-4GB per month so the 5GB hasn't been restrictive, and I can tether now on the 5 instead of waiting for a jailbreak. (and I didn't have to pay for the $$ jailbreak app to enable tethering when I had my jailbroken 4S).

I had unlimited and said screw it. Went with the tethering plan. Unlimited is capped at 3gig so it's not unlimited. At least with my 5gig plan I can tether and I have done that quite a bit since I have had it.
 
Unlimited (Data and text) on Sprint (since Christmas 2008). My wife and I get 1500 minutes (it's 3000 now, but more expensive than what we currently pay under the old 1500). We rarely use all those minutes because most of the people I call use cell phones and Sprint has free cell to cell calling. Long distance is free, nights (after 7pm) and weekends are free.

Just picked up a 2GB/mth hotspot for tethering at an additial $20/month. Sprint doesn't throttle and while I don't know how much data I use (consistently) I've never even thought about it since I have unlimited. And my phone and my wife's phone are constantly accessing some sort of data (email, weather updates, GPS, etc).

Incidentally, we've been on Sprint since 1999. I've waited since 2007 for the iPhone to come to Sprint. Only reason I didn't get the 4S last year was because of the rumors of it being the iPhone 5. When that didn't happen, I chose to wait one more year. Now, I couldn't be happier (unless Sprint lowered my bill).
 
Gave up unlimited for myself and the wife. Between our families, we had 6 phones (4 iPhones and 2 basic phones) and we were paying $400/mo. Now we have 6 iPhones sharing 10 gig with unlimited texting (my 3 didn't have that before) unlimited minutes (my 3 didn't have that before), tethering and Facetime. We pay less than $300 for it. In the first 2 weeks of our first month, 4 of us have only used 1 gig. I looked into smaller plans, and because of the way AT&T stages the phone costs, all of them from 10 gig down cost the same.
