Right now the best thing for it to say is "complete" and assuming you're doing click and collect, complete will update to despatched bang on the stroke of midnight.

I tried two different sims in the one last year and no problem.That is not correct. You will notice the phones are listed on John Lewis as "Sim-Free". This means they will work on any network but will lock to the network of the first SIM card that is inserted. Apple have the same deal with CPW and JL.
