Same here. It was downloading fine up until it reached 1.56GB and then froze. Each subsequent attempt results in "An error occurred while installing the selected updates." 😕

Seeing all the trouble Big Sur causes, I'd better wait a couple of days before updating.

Maybe if they had work towards delivering smaller updates and splitting the download into multiple packages, it would have been easier.

I'm expecting a delivery of an iPhone 12 - Went to check my account on the Apple website (Store section) -- Constantly receiving "Gateway Timeout"
Not gonna be good if I'm doing an iCloud restore and their servers are being flakey.

You should be able to just turn off your WiFi, launch the apps you need, and then reconnect (silly, I know, but it should work).

That's exactly how it works for me. I just launched everything I needed and reconnected online. No issues.
