I had a similar problem, upon restart quick time my mp4 play was very bad. But i restarted quicktime, and now is seems to be okay.

I just downloaded QuickTime 7.0.2 33.3 MB and Safari Update 1.3.1 4.2 MB last evening. Now to see if there will be any difference. Stable so far.
 
Just downloaded the latest for Windows. Seems to work well...

Now I can watch all my H.264 on my slow windows machine!!!
