LOL thats a pretty bold assumption there. I'm thinking most in here are in or around their 40's to 50's. I'm mid 40's and while I have large hands I've had many injuries through sports, weightlifting, and working in the field in construction when I was young. My hands are far from perfect and I deal with varying degrees of pain depending on what time of year it is. I DO however get what you are saying. That's why there is a variety of phones and manufacturers and there should be something out there to suit the needs of most everyone.
You are right, most of us here are enthusiasts. However, the market is going to dictate what Apple, Samsung, Google, Oneplus, etc. do. If there is not a market for the larger devices, they would pull back from them and focus on a small to medium size device. The opposite has taken place due to strong demand and now they are all focusing on foldables either now like Samsung or in the near future (google and perhaps Apple). There are many excellent devices out there to meet your needs. My first choice would be the Pixel 7 which is smaller, the S23, or the iPhone 13 Mini or SE which are excellent devices if you are okay with iOS.
Surprisingly, the device I find easiest to use one handed is the Z Fold 4 due to how narrow the front is. It could also double as a mini tablet of sorts if bigger tablets are cumbersome for you to use.
