I tried Googling this but only get generic answers or solutions to different problems.

I recently reacquired a Mac Pro (7,1) and it worked well initially. When I added 2x spinning disks and a SATA ssd using a sonnet J3i, it takes a long time to boot. The spinning indicator spins for 3-4 minutes. Unplugging the drives lets it boot quickly again.

None of the drives were ever used as boot drives, so the EFI partitions should be empty. They are also currently blank/empty, so it isn’t some weird indexing thing (also, that shouldn’t happen at boot).

Any thoughts?

Yes, mine as well. Appears to be the norm. Although it doesn't take that long, it does take longer that without the extra drives. My guess is that it mounts all the drives before giving the login screen.
