Also got the Mario Kart bundle (I'm going to play it but probably my kids will get way more hours in than me), also looking at Donkey Kong Bananza when it comes out, as well as Metroid Prime 4. Probably sticking to first-party titles, I'll pick up the ones that interest me as the generation goes on.
With only perhaps an hour a day to set aside for gaming, Tears of the Kingdom took me about four months to work through. It was great, and I'd love to have had "better graphics" or "better performance", but I don't really have any intention of playing it again in the near-term. I'd rather spend time with games that I haven't played before.
There are some games from my Switch backlog that I'll be consuming on Switch 2. (Pikmin 4, Metroid Prime remake, the Xenoblade Chronicles 3 "Future Redeemed" DLC...) None of these are games that have been announced to have any specific Switch 2 patch or benefits, but maybe they'll still see more stable performance.
(For third-party games, I'm more apt to pick up the Windows version and play it in Crossover, if there isn't a Mac port.)
